Tis the season

Garlic Parmesan Zuchini Chips

2-3 Zucchini - unpeeled
2 C bread crumbs
3/4 C Parmesan cheese
1/3 C fresh basil
1 T garlic powder
1/2 t salt
1 t pepper
1 t red pepper flakes
2 eggs

Cut zucchini into 1/4" to 1/2" slices
Mix bread crumbs,
parmesan, salt, pepper, garlic powder, basil and red pepper
Whisk eggs
Dip zucchini slices in egg and coat in bread crumb mix
Bake on large baking sheet in pre-heated 450 degree oven for 15-20 minutes until golden brown

Dipping Sauce:
1/2 C mayo
1T lemon juice
1T garlic powder
1/2 t salt
