Patty Pan Squash Recipe

Have you ever cooked with Pattypan Squash? A friend gave me a couple from her garden so I looked up a recipe. It was delish!


Bring 1" of water to a boil in a saucepan. Put in 6 squash an cover. Cook for about 10 minutes or until you can pierce with a fork. Cool and then cut off the top stem and scoop out all the bits of squash. Finely chop those bits and save for later.

Brown 6 slices of bacon and remove to paper toweling
Sautee 1/2 C chopped onion in bacon fat
Stir in finely chopped squash pieces
Stir in 1 1/2 C bread crumbs
Stir in 1/2 C Parmesan cheese
Crumble and stir in bacon
Salt and Pepper to taste

Tightly spoon stuffing into squash shells.

Cover loosely with tin foil and bake 350 for 10 minutes or until heated through.  

This is a tender summer squash and you can eat the whole thing, shell and all.
